Chicken scallops and artichokes

Ingredients

  • Salt and fresh black pepper.
  • A cup of multifunctional flour.
  • 4 chicken scallops (approximately 110 g each).
  • ¼ cup of oil.
  • Fresh parsley.
  • 220 g of angel hair noodles.
  • 220 g of artichoke in small pieces.
  • 2 tablespoons of capers.
  • ½ cup of chicken stock.

Preparation

  • Separate an oven grid and preheat the oven to 100º C.
  • Take a medium skillet and place over medium heat. Add warm water to half the container and add a pinch of salt.
  • In a bag, put the flour, a pinch of salt and pepper. Then season the chicken scallops, place it in the bag and close tightly. Mix so that all portions of chicken are well covered in flour.
  • Put the oil in a skillet and wait until it gets hot. Remove excess flour from the escalopes and fry them in oil. You will know they are ready when browned on both sides (approximately 4 minutes in all).
  • Then place the scallops in the oven to finish baking.
  • Meanwhile, in the salt water, which should be at boiling point, place the angel hair noodles. In order for the tooth to have the desired texture, wait about 3 minutes.
  • Saute the artichokes and capers in a skillet. Add the chicken stock and wait for it to reduce in half. Then season with parsley, salt and pepper.
  • Finally, serve the chicken and pasta topped with the artichoke sauce.

Filet mignon with spinach, grapes and almonds

Ingredients

  • ¼ cup of chopped almonds.
  • 2 spinach stalks without stalks.
  • 4 fillets of your favorite beef or pork cut (approx. 150 g each).
  • A cup of halved seedless red grapes.
  • One tablespoon of balsamic vinegar.
  • Salt and pepper to taste.

Preparation

  • Preheat it in the oven to 180º C. When it is at the desired temperature, place the almonds on a tray and let them brown. Stir so they don’t stick or burn. This will take 5 minutes. Then put them in a small container.
  • Heat a large skillet over medium heat. Season the fillets with salt and pepper and place them in the skillet. They should be cooked for 3 to 5 minutes on each side. Then place them on a plate or tray with aluminum foil so they don’t get cold.
  • Place the spinach and grapes in a skillet. Let them cook a little in their own juices until the spinach is lightly cooked. This will take 1-2 minutes. Then add the roasted almonds.
  • Finally, serve the meat portions and top with the spinach sauce.
