Ingredients
- 5 eggs.
- 4 cup of milk.
- 1 teaspoon of salt.
- 2 kilos of coarse salt.
- 12 kilos of crushed ice.
- 1 and ½ cup of sugar or sweetener.
- 4 teaspoons of vanilla essence.
- 5 tablespoons of wheat flour.
- 3 cups of heavy cream.
Preparation mode
- In a large saucepan, combine the flour, sugar and salt.
- In a separate bowl, beat eggs by hand until well blended.
- Pour the beaten eggs into the pan and mix until you get a smooth dough.
- Cook over low heat, mixing constantly for 30 to 40 minutes, until mixture thickens and forms a film on the spoon. Don’t let it boil, otherwise you can cut it!
- When it is almost boiling, remove from heat.
- Cover the surface of the mixture with waxed paper and leave it in the freezer for two hours.
- After that time, take it out of the freezer and add the cream and vanilla essence to the mixture.
- Place the beater or mixer in the container and cover.
- Secure the lid securely.
- Fill the container halfway with ice, add a quarter of the coarse salt and repeat this process until you reach an inch from the rim.
- Beat the mixture, adding more ice and salt if necessary.
- Remove mixer or beater and remove lid.
- With a spoon, compress the ice cream and cover the container with waxed paper.
- Leave it to rest for between two and three hours for the ice cream to set.
- The result yields approximately fifteen servings.
pistachio ice cream
Ingredients
- 3 eggs.
- 1 cup of sugar.
- ½ tablespoon of salt.
- 2 and ½ cups of milk.
- Green vegetable dye.
- Almond extract.
- 2 cups of sour cream
- 3 tablespoons of wheat flour.
Preparation mode
- Prepare the egg mixture as indicated in the vanilla ice cream recipe.
- Place on fire for 15 minutes, then beat for another 20 minutes.
- Add salted and chopped pistachios in large chunks.
- Mix well with a large spoon. Cover the mixture and finish making the ice cream.
- The result yields approximately ten servings.

Ingredients
- 3 eggs.
- Lemon juice.
- 1 cup of sugar.
- 2 and ½ cups of milk.

- 6 ripe bananas.
- 1 pinch of powdered cinnamon.
- 2 cups of heavy cream.
- 3 tablespoons of wheat flour.
Preparation mode
- Prepare the egg mixture as indicated in the vanilla ice cream recipe and cook for 15 minutes.
- While the mixture cools, place in a blender a spoonful of lemon juice and the chopped bananas.
- Add sugar and a pinch of powdered cinnamon. Cover the blender and blend until smooth.
- Add the two mixtures, the egg mixture and the blender, with the cream cups. Beat well until you get a smooth mixture again.
- Put in a form and freeze. Makes, more or less, five servings.
Passion fruit Ice Cream
Ingredients
- 1/2 cup of sugar.
- ½ cup of water.
- 1 can of heavy cream.
- 1 can of evaporated milk.
- Pulp of five passion fruit.
- 25 grams of chocolate chips.
Preparation mode
- Put the evaporated milk in the freezer the night before.
- In a blender, place the passion fruit pulps and water.
- Quickly beat and strain the seeds. Return the passion fruit juice to the blender, add the frozen evaporated milk, cream and sugar.
- Beat at maximum speed for five minutes until all ingredients are well mixed.
- Place into individual molds and freeze for four hours.
